Little Caesar’s Pitas

Ingredients:

4 cups spring mix greens
2 cups cooked chopped chicken (about 8 ounces total)
½ cup chopped roasted red bell pepper
½ cup reduced-fat Caesar dressing
½ cup reduced-fat shredded parmesan cheese
4 whole wheat pita bread rounds, halved
Black pepper to taste

Instructions:

  1. Combine greens, chicken, red peppers, cheese and salad dressing in large bowl. Toss to blend. Warm pita halves in the microwave for 10-12 seconds.
  2. Fill each half with equal amounts of the salad mixture. Sprinkle with black pepper, if using.

Makes 4 servings (2 pita halves plus about 1 ½ cups salad mixture per serving)
