Jingle “Bell” Stuffed Peppers


2 pouches Frozen Meatless Ground Burger
1 pkg (10 ounces) frozen whole kernel corn
1 ½ cups TACO BELL HOME ORIGINALS Thick N Chunky Salsa
1 ½ cups cooked Brown Rice
1 cup 2% Milk Shredded Reduced Fat Colby & Monterey Jack Cheese, divided
1 each large red and green bell peppers, cut in half lengthwise, seeds removed
½ cup water
  1. Mix ground burger, corn and salsa in large nonstick skillet; cook on medium heat 5 minutes or until heated through, stirring frequently. Remove from heat. Add rice and ½ cup of the cheese; mix well.
  2. Spoon burger mixture evenly into pepper halves; place in 13 x 9 inch baking dish. Pour water into dish; cover with foil.
  3. Bake at 400 degrees for 30 minutes. Uncover, sprinkle with remaining ½ cup cheese, Bake an additional 10 minutes.

Makes 6 servings, each serving equals 40 grams Carbohydrate.
