Grasshopper Pie

Ingredients:

Nonstick cooking spray
2 cups low-fat graham cracker crumbs
4 tablespoons unsweetened cocoa powder
¼ cup light margarine, melted
8 ounces fat-free cream cheese, softened
¼ cup Splenda
1 cup skim milk
1 teaspoon mint extract
4-6 drops green food coloring
1 ½ teaspoons vanilla
1 container (8 oz.) fat-free whipped topping

Instructions:

  1. Spray 9-inch pie plate with cooking spray. Combine cracker crumbs, coca, and margarine in medium bowl. Press onto bottom and up side of prepared pie plate. Refrigerate.
  2. Beat cream cheese and Splenda in large bowl with electric mixer until fluffy. Gradually beat in milk until smooth. Stir in mint, food coloring and vanilla. Fold in whipped topping. Refrigerate 20 minutes or until chilled, but not set. Pour into chilled crust. Freeze 4 hours or until set.
  3. Serve slices as needed. Pack remaining frozen slices in 1-quart freezer resealable plastic food storage bags and return to freezer.
