Chocolate Chip Cookies
Ingredients:
¼ cup canola oil
½ cup sugar substitute
½ cup packed brown sugar
1 egg white
1/3 cup plain fat-free yogurt
1/3 cup unsweetened applesauce
1 teaspoon vanilla extract
1 ¼ cups all-purpose, unbleached flour
1 cup oat flour
1 teaspoon baking soda
½ teaspoon salt
¾ cup mini semisweet chocolate chips (6oz.)
Instructions:
- Preheat oven to 350°.
- Cream butter blend with sugar substitute and brown sugar. Add egg white, yogurt, applesauce and vanilla. Mix well and set aside.
- Combine flours, baking soda and salt on waxed paper or in mixing bowl. Add to creamed mixture. Mix well. Stir in chocolate chips. Dough can be refrigerated at this point to be baked off later, if desired.
- Using a large tablespoon, scoop 1 ½ tablespoons of dough per cookie onto prepared baking sheet. Place dough balls 2 inches apart. Bake for 12 minutes or until the edges turn golden. Remove from oven and let cool for a minute. Cool completely on wire rack. Store in an airtight container.
Makes 24 (2") cookies; 1 cookie per serving
